  • LAMill Boutique Opens in Los Angeles
    I just had a perfect cup of coffee.

    It was lightly aromatic, deep chocolate brown in color, and had a satisfyingly smooth, heavy body that made my mouth hum. A Sumatra/peaberry, it was served in a pristine white porcelain cup and cost $2.50.

    Heaven.

    It's one of many choices from a carefully thought out menu of coffee, entrees, and desserts at LAMill in the city's Silverlake district, between downtown and Hollywood, and it's hopping with folks from teens to seniors.

    Coconut Coffee ala Crème
    This delicious coffee served warm is a great way to remind you of soft sandy beaches in winter time, and a great bring-along cold coffee for when summertime finally arrives and you can dip into the ocean or pool once again. The coconut can easily be found in the baking department of most supermarkets or check out sources at a Thai or other Asian neighborhood market.     Irish Coffee Tartlets
    Who said St. Patrick's Day means Irish coffee beverages only? This charming tart has the bite of fine Irish whiskey coupled with the creamy richness of chocolate and coffee. We suggest pre-baked tiny tart crusts for easy prepping, however, if you're ambitious, make a class butter crust to show off the filling best. Tiny tarts are about 2" in diameter, and this recipe makes about two dozen.

    Chicken Breasts Mole Sauce
    Mole is a classic chocolate-coffee sauce perfect for savory dishes enchiladas to this delicious chicken breast entrée. Perfect accompaniments are black beans and brown rice accompanied by a salad of romaine lettuce, sweet Vidalia onions and mandarin oranges in a light viniagrette. Mole tastes best freshly-made. It's so yummy, leftovers are rare!

    BREWING TIPS: Cleanliness is Next to Coffee Perfection
    Keeping your coffee brewer clean is one of the best ways to help it brew the best cup of coffee. Most manufacturers provide cleaning instructions with the manual (we don't always read them, either). One of the first things you'll discover is that using a clean cloth or heavy-duty paper towel to wipe down machines, wipe out excess oils or residue or remaining grinds is essential to keep parts in working order.     TREE TO CUP: Peaberry Coffees Gaining in Popularity
    The coffee cherry, a red to purple fruit of the coffee tree, holds two seeds known as coffee beans. Sometimes, up to five percent of the crop will contain only one seed - the peaberry - because the other was not fertilized. This anomaly has such a concentration of flavor, the peaberry has become sought after by many coffee lovers although some pundits say it's marketing that has changed the coffee grower and the coffee consumer's attitude.

    Soft Bean: Coffee grown at relatively low altitudes, under 4,000 ft. The lower altitudes and consequently warmer temperatures produce a faster maturing fruit and a lighter, more porous bean.

    Hard Bean: The term often used to describe coffees grown at relatively high altitudes, 4,000 to 4,500 feet. Coffee grown above 4,500 feet is referred to as strictly hard bean. The higher altitudes and lower temperatures produce a slower-maturing fruit and a harder, less porous bean.

    Yes, it is a common question and, alas, there is no absolute answer. There are people who swear by refrigeration or freezing for either ground coffee or whole beans because they believe the chill factor contributes to the longevity of the bean. On the other hand, many coffee experts say that the danger of condensation and damage to the beans from water is higher than most people imagine no matter how carefully they regulate the temperature of their freezer or refrigerator.
